Wallaby teriyaki

Serves 2.

Ingredients

500g thinly sliced wallaby meat
1 stick of celery
1 red capsicum
1 onion
snow peas
sunflower oil

Teriyaki sauce
3 tbsp shoyu (soy sauce)
4 tbsp sake
2 tbsp sugar
1 tbsp mirin (cooking sake)

Method
Pan-fry the wallaby with sliced celery, red capsicum, onion and Shitake mushrooms together with snow peas.
When the meat and vegetables are cooked, add the Teriyaki sauce and turn all the ingredients to ensure they are well covered with the sauce.

Teriyaki Sauce
Place all the ingredients for the sauce into a saucepan and bring to a gentle boil, when the liquid has been reduced to half remove from the heat and cool.
