A quick and easy treat for kids; delicious spread with jam, cream or whatever you like.
Ingredients
1 cup self-raising flour
2 tablespoons of caster sugar
¾ cup milk
60 g melted butter
1 egg
extra butter
Method
Sift flour and sugar in a bowl.
Whisk the milk, butter and egg together and add to the flour mixture.
Heat a large non-stick frying pan over medium heat. Melt some butter in the pan and use a tablespoon to spoon three or four blobs into the pan.
Cook for two minutes or until bubbles form.
Turn over and cook the other side for another 12 minutes.
Remove pikelets, then regrease the pan and add more spoons of the mixture. Repeat.
Serve with jam and cream, lemon and sugar or whatever you like.
