Mini banana and sultana loaves

With the mini loaf pans and the simple recipe, your children will love these little treats. Use any fruit you have on hand for a variety of flavours.

Ingredients

125 grams butter, plus extra to grease tray
1 ¼ cups self-raising flour
½ cup caster sugar
2 eggs
2 ripe bananas, mashed
¾ cup sultanas

Icing

1 cup pure icing sugar
water

Method
Preheat oven to 180 șC.
Grease mini loaf tray.
Sift flour and sugar into a large bowl.
Whisk the butter and eggs together. Add to the flour mixture along with the mashed banana and sultanas. Mix well.
Spoon the batter evenly into the greased tray and smooth the surface with the back of the spoon.
Bake in the oven for approximately 18 20 minutes.
Set aside for five minutes before turning out on a wire rack to cool.
Once cooled, mix the icing sugar with enough water to make a thin paste. Drizzle over the cakes with a spoon and leave to set.
